Chef Federico Scaiola

Born in Milan to a Piedmontese–Lombard family, Federico grew up inside the world of Italian hospitality. His family owned Italian restaurants, and he spent his childhood surrounded by kitchens, cooks, and the rhythm of service.He later lived the second half of his life in Mexico, where he absorbed the depth, warmth, and cultural richness of its cuisine. This dual heritage defines his culinary voice: Italian precision and craft, elevated with the bold character of Mexican flavors.After studying culinary arts and hospitality, he built his career across renowned hotels and restaurants, refining his understanding of both fine dining and regional tradition.For the last five years, Federico has called Canada home. He is a Red Seal Chef and currently serves as Executive Sous Chef at the four-star Westin Bear Mountain, while collaborating with local restaurants and developing his private dining concept: Heritage Atelier.

Five Courses Italian Experience…

1. Crostini di Burrata al TartufoGrilled artisan sourdough, garlic confit, topped with imported burrata, local cherry tomato bruschetta, basil oil, and a touch of black truffle.
Purpose: A bright, creamy welcome bite layering comfort and luxury—your first signal that this is not a typical Italian menu.
2. Crema di Cavolfiore e Gorgonzola DolceCauliflower and Imported Gorgonzola dolce velouté finished with pancetta.
Purpose: A soup that moves from earthy to decadent, showcasing contrast between comfort and opulence.
3. Tagliatelle al Nero di SeppiaHand-rolled pasta (local eggs), rich anchovy cream sauce and squid-ink, Calamari tentacles, topped with salmon caviar, finished with lemon zest and micro herbs.
Purpose: Technique, seafood luxury, and fresh pasta mastery—your signature dish moment.
4. Ossobuco alla MilaneseSlow-braised veal shank, saffron risotto Milanese, gremolata micro-garnish.
Purpose: Heritage elevated—the classic Sunday dish transformed into a high-luxury centerpiece.
5. Zabaglione al Marsala (Table-Side)Warm zabaglione whisked in front of the guests, served with Amaretto-soaked ladyfingers, cocoa dust, and candied citrus.
Purpose: A theatrical finale blending tradition, aroma, and nostalgia—Italian hospitality expressed with elegance.

Five Courses Mexican Experience...

1. Tostada de Pulpo Zarandeado con Pipián VerdeLocal West Coast octopus slowly cooked, marinated in chile zarandeado, torched, served over pipián verde and crisp tostada.
Purpose: Smoke, fire, and heritage—Mexico’s coastal soul meets refined
2. Sopa Azteca ElevadaRich and creamy Azteca broth, avocado, crema fresca, imported cotija cheese, crip chiles bouquet.
Purpose: A humble soup refined into a broth-driven sensory moment.
3. Chile en Nogadafsfasfasfd.
Purpose: Ancestral technique presented in modern luxury—your strongest storytelling dish.
4. Cerdo al Pibil & Mezcal TobaláSlow cooked Pork Shoulder with chile morita–mezcal sauce, served with mini roasted cambray potatoes, seared seasonal vegetables and epazote sauce.
Purpose: Tradition reimagined—deep, smoky, high-impact flavors with fine-dining execution.
5. Flan de Maíz con Tres LechesMaíz criollo flan, tres leches cream, and crumble of caramelized white chocolate.
Purpose: A sweet tribute to Mexico’s agricultural backbone, executed with elegance.
